Lobster Bisque in Puff Pastry

Lobster Bisque is my favorite thing to make for a special celebration.

Lobster bisque is such a rich and luxurious soup that it’s hard for anyone to resist. I was inspired by the puff pastry when I dined at a now-closed restaurant in San Francisco called Tommy Toys. Although the restaurant is no longer in operation, I recall visiting it when I was a management trainee for a New York multi-national bank fresh out of college. Each time I make and enjoy this bisque, it brings back a funny memory from that restaurant.

It was actually my first client dinner, and I was proud to have my first corporate card to treat my client. There is a very amusing story behind that evening. I was so nervous during my first client dinner that I accidentally ordered a very expensive wine without carefully reading the wine menu. When the waiter asked me if I wanted the wine label to be steamed off as a souvenir to remember the experience, I thought he was crazy. Who would want a wine label, right? However, it turned out that the wine I ordered was indeed very expensive, and by the time I realized it, I had already finished drinking it. My client, displaying great class, graciously paid for the dinner. I'm sure he knew that my expense report was likely to be rejected!
