Shrimp Risotto

Seared Prawns in a Japanese pumpkin risotto is always a crowd pleaser.

This is one of my absolute favorite dishes to serve at a formal dinner party. It looks great and it tastes even better. The combination of richness of the risotto made from seafood broth and Japanese pumpkin is just a great match. The flavors just meld together, and the prawns just add a fresh seafood taste to the dish. I usually get asked for seconds when I serve this dish.

Recommendations:

  • If you don’t have one already I would highly recommend you consider getting a Le Creuset Casserole pan with lid https://amzn.to/3KXKulc. You could use it for so many kind of dishes but it works great for the risotto.

  • Arborio Rice: https://amzn.to/4cf2Jyq

  • Parmesan Cheese (always grate your own and don’t buy the grated kind)
